Stoney Brook Assisted Living of Belton celebrated the completion of the Phase II project Thursday April 16 with a ribbon cutting ceremony and the reading of a Proclamation by Belton Mayor Marion Grayson.
Mayor Grayson read the proclamation to the guests and residents in attendance, closing with, “The City of Belton would like to thank Stoney Brook of Belton and it’s staff for the support and services they provide to Belton residents entrusted into their care. I hereby proclaim April 16 as Stoney Brook Assisted Living and Memory Care day.”
A ribbon cutting ceremony then took place with members from the Belton Chamber of Commerce and Stoney Brook staff.
Sandy Carlson, Executive Director of Stoney Brook Senior Living, thanked the Mayor, Chamber of Commerce, and guests for attending. Carlson invited everyone to stay and enjoy the food and beverages that were laid out on beautifully decorated tables.
“I had several people tonight ask me who catered the food,” said Carlson. “Everything here was prepared by our chefs in our kitchen. I am very proud of our team.”
Executive Chef Charlie Young and staff prepared a banquet fit for a king, which included edible flowers and an attractively lit chocolate fountain.
About 125 people showed up for the ribbon cutting ceremony.
Ground was broken in July of last year for the new wing, which has 18 rooms, and as of yesterday, more than 95 percent of the rooms have already been occupied.
